Fijian Bundled Taro Leaves

(Waihau 'ai - "Ruru 1) Stack about 6-8 small to medium size taro leaves one on top of the other. Leaf side facing up, Stems should be previously rerrioved. Do not throw away stems of peeled skins. 2) Peel the skin of the long stems until near the tip. Tie the loose ends of the peeled skin togetherand peel the remaining skin off at the tip. This should form a long "string." 3} In small pieces plaee the pēeled stems on top of the stack of taro leaves. 4) Fold'the stack like ā package. Start by folding the top of the leaves towards the piko(where the stem. and the leaf join]. Fold the sides inwards and complete bv tucking in the bottom of the leaves towards the piko. Fold the entire bundlg in half. ; 5) IJsing at least two of the peeled stem skins, tie the bundle together. 6) Steam for at least two hours. The bundles eanbe frozen fōr later use. Serve with kalua pig, ehieken or any othermeat dishās a vegetable. If a coconut cream sauce is made, pour over the bundles and serve as a side dish.
