Ka Mea 'ai o Ka 'Aina Polapola Tahitian Foods

Thanks to one of our readers, Mrs. Ruth Fryling and her Tahitian friend, Estelle Reynolds of Borabora, Tahiti we can try some of the favorite foods of our cousins south of Hawaii. These recipes have been tastedby one of our editors and are rated excellent but a bit rich! Poisson Cru a la Tahitienne (Ka i'a maka Polapola — Fresh Fish Tahitian Style) Ahi, aku, uhu(parrotfish), a'utswordfishjoranypink or white flesh fish cut into small bite size pieces Salt water (rock salt with fresh water) lime or lemon juice vegetables — cubed or diced (onion, tomatoes, watercress, cucumber,.parsley, daikon ...). Salt and pepper oil (vegetable) — optional fresh coconut milk (or cream) Soak fish in salt water. Cut vegetables in cubes. Rinse fish with fresh water before adding lime or lemon juice, leave for 15 minutes. Take out fish from citrus juice (do not rinse) and mix fish with vegetables; add salt and pepper to taste. Add coconut milk last. Chill for 30 minutes before serving. Parrotfish (uhu) has a very light taste and white meat. Use oil when fresh coconut milk is not available. Poe Maia a la Tahitienne (Tahitian Style Banana Pudding Dessert) Very ripe bananas (especially fe'i or mai* a Polapola) Tapioca starch Vanilla (fresh vanilla beans steeped in rum is best. Only liquid is used)

Freshly squeezed coconut milk For every cup mashed bananas add Vz cup of starch arid mix thoroughly. Add vanilla to taste. Put in oiled pan and bake y 2 to-% of an hour in 325 oven. Will rise a bit and resemble baked pudding. Serve with a bowl of ftesh coconuf milk to be poured * over each serving. Papaya may be used in place of bananas. Also fresh pumpkin, cubed, cooked with possibly a bit of brown sugar added. ■ .
