POI NUT BREAD 1 pkg. (1 lb., 1 oz.) poi 3/4 eup water 2 cups flour 1 eup sugar 2 tsp. einnamon 2 tsp. baking soda 1 tsp. salt 3 eggs, slightly beaten 1 eup salad oil 2 tsp. vanilla 1/2 eup chopped macadamia nuts 1/2 cups shredded coconut 1/2 eup crushed pineapple Preheat oven to 350. Mix poi and water; blend well. In a large bowl combine flour, sugar, einnamon, baking soda and salt. Combine eggs, salad oil and vanilla; add to flour mixture. Stir in poi: add nuts, coconut, and pineapple. Pour into 2 greased loaf pans; bake for 45 minutes. Makes 2 loaves.
